Hi Dr. Stoll,
It's Joanie B. here again still suffering from panic attacks, but I feel I'm taking more steps to wellness. I bought all of the books you have recommended, but I really need to ask you this...can you give me an example of one of your days? What do you do first thing when you get up? What do you eat for breakfast, lunch, and dinner? Snacks? Exercise? SR? I'd love to have some kind of guideline. The whole foods seem to be a very expensive way to eat and live, and with six children and a husband, our grocery bill on a tight budget. Can you offer any suggestions?

Whole foods IS an expensive way to live! Isn't it ridiculous that JUNK with a billion chemicals and additives is dirt cheap and REAL food w/nothing added costs a fortune? We only have two kids and it's really taking a toll on us too (AND I'm sick of cooking & washing pans 24/7)!
Can you plant a garden next spring? This is what I'm planning to do to help lessen the cost of fresh organic veggies.

amen to that. while I despise processed food the constant stress of cooking and cleaning and working 40 hrs a week will kill me b4 the junk food does. ok probably not but it getsstressful for sure.

This has been a bone of contention for me for the last 30+ years. A long time ago, I asked a health food store owner why organically grown veggies were so much more money. She replied that they are "hand" picked and the bugs were removed by "hand". I say "so what?" I understand they are in business and need to make a profit, but $4.00 for a head of cauliflower is ludicrous!

I have never recommended any life style change to any patient until I had done it myself! That way I can speak from experience.
For the first 2 weeks of the PWFD, I cursed the manufacturers at least several times a day. My shopping took me a lot longer each time I went to the store and it was frustrating to say the least. However, then it started getting easier and now (actually, within 2 weeks) it takes me a lot less time to shop and everything is a lot easier. As a matter of fact, my grocery bills are much less--now that I know what I am doing!
The food manufacturing companies have had nearly 100 years to brain-wash the people into thinking that we have to eat their stuff and it is just not true.
I am trying out the Atkins Diet right now and so my diet is not typical of what I learned from the PWFD.
I think the most important thing for anyone to do is figure out if this will make enough of a difference in their experience of life that they believe it is worth continuing. If it does, they will be GLAD to make the effort. This means getting Beth's book and digesting IT (no pun intended). Then taking it to the store with you for the first 2 weeks so as to be sure you ARE perfect. By then you will begin to know if this is worth it to you.

In my area there is a company that delivers fresh organic seasonal fruits and veggies to your house each week for a fixed price. You may find something similar locally. The only downside is that you have to be very flexible and like the stuff they deliver. This *may* be a way to save money, but I'm not absolutely sure since I've never done it, but a couple of my vegetarian friends have and LOVE this service.

Don't forget that the farmer has to hire a lot of labor to grow organic produce! Doing things by hand takes much more time and effort than using machines, and we are also talking about soil fertility, planting, prepping the fields, in addition to pest control and harvesting. Although the farm laborers and pickers don't make much, they still have to be hired and paid a wage or the grower doesn't get his/her crop in. Organic farming is labor-intensive, and even though the prices are high, the small growers, at least, are not that well-off. The middleman takes a big cut as well, to get the product to market.
Even if they can't grow their own, some people are fortunate enough to have access to farmers's markets, farm stands, U-pick, co-ops, home-delivery subscription services, or CSAs (community-supported agriculture) programs for fresh, organic produce during the growing season. These options can be very reasonably priced, and if you have the ability to store or freeze quantities for later, you can extend the harvest.
Organic farming also represents a culture of environmentally friendly methods, building and maintaining soil fertility naturally, and worker rights issues that, for a lot of consumers, justifies the extra costs in the market. Organic farming will continue to expand with the demand for it, and eventually the prices will come down.

I think that you have to do as much as you can with what you have. I have followed the wellness for 3 years now. I cannot afford to buy fresh organic fruits and veggies unless its from our own farmers market.
I don't buy grass-fed beef or chickens without hormones....Its not in my budget. We have chickens for the eggs only. Its great to have the eggs, but the grain we feed is even expensive. I do free-range and grain with them.
We eat lots of fruit and veggies. We usually have our own garden in the summer. I do what I can to follow a healthy diet. Just think how much better you will feel if you eliminate all processed foods from your diet. Put your family on whole wheat bread instead of white bread. I purchase my bread from the day old store.
I realise that with a large family it is very difficult. I can't believe how expensive grocerys are today.
Work towards goals, do what you can do within your budget. You don't want it to become a BIG STRESS in your life. If you think you can, you will start finding ways to make it work. If you think you can't you will only find excuses.
One more important thing. Probably the most important, make SR number one. The others will be wasted without it.

In spite of the high prices, for at least the last 5 years, the production of organic foodstuffs has been unable to keep up with the demand. The gap is still widening.

I have always tried to learn anything worth while by experiencing it within my own body when possible. After years of "sort of" watching Atkins, I have finally come to believe that certain genetic patterns might be helped by it.
I have had a life long struggle with weight (I am the oldest of 7 children.) My parents both had weight problems and all of my siblings do as well. The bane of my life has been that 24 hours a day I have felt hunger all of my life.
I have 4 grown children and they all have weight problems. One weighs 350#. When my daughter lost 50# with Atkins, I finally decided to give it a try.
The very first day I found that I was not hungry--for the first time in my life--and so long as I stay on it I have not been hungry for a couple of months now. If that is the only thing it does I will continue it. I have not lost an ounce. I have about 30-40 pounds I could do without :o).
Yeah, this IS a big change but even Atkins recommends a whole foods diet. It is interesting to buy a pork butt and make a roast (fresh rosemary sprigs), have bacon and free range eggs for breakfast, etc.

Wow! Congratulations on your "open-mindedness". Don't you just hate genetics sometimes? Yes, the weight problems are inherent in my family as well. I also have 30-40 lbs. I could do without. And the hunger thing; that goes without saying! :o)
It's interesting that you haven't lost any weight. In doing Atkins a couple of times myself, I find that I lose a few lbs. during the induction phase, and then nothing after that. The last time I tried it was a year ago, but during that time I was also undergoing chelation treatments, and I realized afterwards that the dextrose in the solution might have been hindering my efforts. So, I will probably try it again in the very near future.
I also believe that I may have Wilson's Syndrome, (low temp for years) and am seeing a doctor on Friday about it. Are you familiar with Dr. Ray Wunderlich in St. Pete? That's who I'm going to see. He's REAL expensive, but I'm hoping he's worth it. Do you believe that maybe you and your family may have thyroid issues? Also, are you starting to change your thinking about virgin coconut oil since you began the Atkins?

Hmmm, now I'm really confused! Most all the healers I've worked with say that no one should be eating pork if they want to keep or improve their health.
And how can bacon be even remotely considered a whole food? Are we talking about regular grocery store packaged bacon? Is it not cured and infused with sugar, nitrites, and MSG? It's legal to not list individual ingredients on the package, just list the generic word "spices" which they do not have to define. I love BLTs, but I gladly gave them up when I learned how bad bacon was.

I wasn't aware you were over-weight, since as you say, "healthy people tend to weight less than the archival insurance charts".
As I diabetic, I thought you consumed too much grain anyways.
Are there any other observations you've been able to make? I know if I don't have 80-100 g protein/day I have very low energy.

Just a few comments:
1. Chelation, properly done, uses sterile water and NOT 5% glucose!
2. Ray knows what he is doing. Congratulations for finding him. Say hello to him for me. I have not shaken his hand for 20 years.
3. I still do not think coconut oil is healthy except used externally.

When I started this, the very first thing I did was go to the butcher and ask for the fattest pork butt roast he had.
There is no such thing (at least I have not been able to find it) as nitrite-free bacon in stores. If I decide to continue this I will have to go to a farm that butchers their own meat and get a side or 2 of bacon. I can then freeze it and have sections of it sliced for me at the butcher as I need it.
Since I am just trying this I know that a few months of nitrites is a small price to pay for learning.

I notice Safeway sells what they call sliced pork side, which looks like bacon but is only in the frozen section because it is without preservatives. Might be kinda bland and need seasoning, which I am sure you are qualified to do for yourself. :)

My chelation doctor told me (and the label on the bottle confirms this) that the solution is 5% dextrose.
It's a real comfort to me that you know Dr. W. I will definitely say hello to him for you. I'll also let everyone know how I make out.

I bet it's a different experience! Several times I tried to be vegetarian for spiritual reasons. Then I tried avoiding red meat and just eating poultry and tofu for protein. When I finally learned that ample amounts of meat, especially beef, were what my body needed, I was not happy about it. However, I always try to make the best out of whatever life hands me. So I decided to relish eating all kinds of meat! Now, when I head to the grocery store, I think "Top Sirloin" with gusto!
Maybe we can share one of those "psoas muscles" (filet mignon) sometime. :o)

5% glucose is not according to the international protocol!
Sterile water is ideally isotonic when the recommended additions are injected into the bottle. The fluid that goes into the vein is supposed to be isotonic!

I am just reading some of these posts now, and wanted to make a few comments.
Its certainly not easy is it, to make such a BIG change. I take it you were predominantly vegetarian for many years, as I was for 12 years.
It takes a real mindset to do this. It took a while to convince my bodymind to do this. Reading articles here from many who were in the know, or so it seemed. But I too dont have that gnawing hunger, although I havent ever had a weight problem to speak of, allthough I was a very chubby baby! :)
I find protein rich meal does an amazing job of quelling down hunger pangs almost immediately it hits my stomach. You do have to be somewhat imaginative/creative with this kind of diet though. So far, I havent experienced any negatives and I have been doing this since Feb. The cravings are ALL gone!
I am finding this way of eating, quite satisfying, and yummy! Breakfast is the best! I have poached eggs, bacon (not everyday) sometimes baked beans (very low sugar), chicken sausages with onions and red chilli, sometimes cut up red bell pepper and cook with the onions and sausages. Its all very yummy! Just wish I had the time every morning for such a breakfast.

I do think what happens on the atkins diet is that you will shed kilos if you NEED to in the beginning months, but then your weight stabilizes down the track, and this will stop. I am now at the perfect weight for myself and i am happy with it.
I think if there is excess weight that your body is carrying around, once you start onto the right diet for YOUR body type, then the weight will come off. Walt, are you sure that you are overweight? Maybe you are just right at that weight for your height etc? :)
Have you restricted grains Walt?

The coconut oil works amazingly well for scalp problems. I sure hope it keeps on working for me! No more flakes, itching, redness, just wonderful smooth scalp! Yay!

I got rid of wheat about a year ago and all grains when I started Atkins.
20 years ago I woud have been about right with my weight as it is right now but, at my age it is about 30# too much.

One of my friends is a farmer and grows out their own pigs, beef and goats. I had my first pork meat without all the additives. It was delicious. I also got to taste some bacon without all the flavors. It was good, but bland.

This is difficult to believe. I find whole foods always much less expensive than refined and processed foods... with exception of only whole grain bread maybe. The term "whole foods" doesn't mean organic, biodynamically grown, or anything like that.
