Some of my personal observations:
I tend to get canker sores when I drink MORE soft drinks (in my case Mountain Dew and more recently Green River) than usual. I don't know if this is because they are citrus/acidic based or what.
I also get (about once per year) an incredibly painful sore on the tip of my tongue. It looks like one of the tiny ball (of which it looks like the tongue is made of) has gotten inflamed. It's about the size of the head of a pin and is white.

Your body will only take so much abuse. Canker sores are infectious in nature SO, your immunity is related to why you get them.
