Vegetable oils make trans fats from heating (olive oil is one of the only veg oils safe to heat). Think about natural peanut butter-oil separates. Likewise in tahini (ground up sesame seeds). Chances are, the ability to grind up nuts and seeds has existed for a long time (grinding with stomes, perhaps), so veg oil has been around since then and people probably heated it. HOWEVER, I believe the causes of diabetes are many. Fats may contribute, but so do the increasing amount of refined carbohydrates in our diet, consuming large amounts of sugary liquid, whether soda or orange juice, and the junk science that made people turn away from protein and fat and eat carbs instead- the government's food pyramid was part of that unk science. For the refined carb argument (which is also blamed for precocious puberty) , read, Diabetes and the Hypoglycemic Syndrome by two MD's named Thrash. They write about 'Accelerated Aging Syndrome' which is a continum from the sugar water in the hospital nursery, to a diet with a high proportion of refined carbs, to early puberty, to type 2 diabetes.

There will always be some genetically resistant people who can soak in pure sugar all their lives and never have a problem. This trean has been known for more than 40 years. The ADA's response to it, 30+ years ago, was to change the "standards" (now people had to have more sugar in their blood to be called diabetic) and ignore the problem.

At the current rate of change, within 40 years everyone in this country will be morbidly obese. But remember the genetic rule.

However, that does not change the fact that we have a very serious and worsening problem in these areas in this country right now!

Just look at the statistics for the past 50 years. Taking into account those people whose genetics will not allow diabetes OR obesity, I hope you are still here when everyone agrees that something drastic has to be done.
