I have been eating organic foods almost exclusively for
about a year now. The other day I didn't make it to the
co-op and decided to get some chicken breast and
russett potatoes from the regular store. Neither were
organic. I couldn't believe how much longer it took to
cook these items!!! Especially the chicken! The organic
chick breasts I normally get cook in about 2 minutes.
THese took more than 3 times that time for the same
size pieces. And they didn't taste nearly as good.
I used to notice this in the summer when I would eat
mostly vegetables my father had grown. They were
always tender and easy to cook, but store bought ones
took much longer and never achieved the suppleness
of the homegrown or organic stuff.
Just curious if anyone knows why.
I had decided for health reasons to go all organic, but
having a little taste of the other side again just firms my
resolve that it is worth the extra effort and cost. Regular
food takes like crap!!! I just never knew it!

I can't answer your question, but I definitely agree with you about the flavor. Did you ever have store-bought non-organically grown carrots that tasted like carrots? Give me organic carrots anyday, even though they sometimes cost 2-3 times as much. I have noticed, too, that organic turkey breasts take less time to cook, probably because they aren't pumped up with MSG, oil, broth, and sugar. Fortunately they still taste good when they are slightly overcooked :)

I had this same experience when I first started learning about how much better whole foods tasted and decided to go totally organic. This was before I began to recommend this to my patients.
I found a live organic turkey farm and brought the live turkey home for Thanksgiving. I killed the turkey, defeathered it and fixed it like I had always done.
I had weighed it, dressed, and looked at the chart about how long to bake the turkey at what temperature (This was the same chart I had used for years for the non-organic turkeys I had always done before.
When I took the turkey out for our dinner, it was almost just a pile of bones and overdone turkey.
Since then I have learned that a turkey takes about half the time to cook if it is organic.
Since our metabolism is a similar process to cooking, it made me begin to realize what a stress it was to the system to eat these "plastic fowl" we have been educated to use by the system!
I have not answered your question because I do not know any one who knows. However, there is absolutely no doubt about the phenomenon.

I suspect with veggies it's because organic veggies are fresher when you get them. Older veggies get dryer and tougher and therefore probably take longer to cook. Who knows what chemical changes the pesticides and artificial fertilizers might cause, too.
Don't know what to think about the poultry!

Your post about the organic turkey you cooked reminds me of two years ago when I visited my son for Thanksgiving. He had heard on the radio that the turkey only required three hours to cook (it was a large fresh turkey), and no matter what anyone said, he listened to the radio show host. Now that you have told your story, I have come to the conclusion that the radio "chef" was talking about an organically=fed turkey!! The turkey my son served was almost raw, so who knows what the farm had fed it! Raisa
