how to cook brown rice?

I bought organic brown rice again and doesn't matter how long it is cooked-it is still hard.
Am I doing something wrong?

I boil 2 3/4 cups of water and add 1 cup of brown rice. Cooks 45 minutes, covered, heat reduced to medium, in a think bottomed stainless steel pan.
My old method was to dry roast the rice kernals over high heat before boiling them according to the above directions. Both methods worked well. Avoid aluminum pans, avoid thin bottomed pans.
If rice is still tough, you might give it a second cooking as part of abother dish-adding it to soup as it heats, frying it in the making of fried rice or spanish rice.
Another possibility is you have hard water. Soften by adding salt, or, if on low salt diet, buy bottled water for cooking rice.

I soak my rice overnight in filtered water, drain, then prepare as per directions with fresh water. Never had a problem.....

2 parts water, 1 part rice

Bring water to boil

Add rice, cover, simmer 35-ish minutes or until water is absorbed

I have tried several ways to cook brown rice, on the stove top, in a pressure cooker but the best tasting rice is baked in the oven.

1 cup rice
2 1/4 cups water
pinch of salt
Put it all in a casserole type dish, cover and bake for one hour. Start peeking at it when it has cooked 45 minutes in case your oven varies from mine.
There is no sticking to the pan, the rice turns out slightly sweet and it is easy.

I guess I cook mine longer than everyone else that's posted so far. I follow the instruction on the Lundberg's brown basmati rice bag.

1 cup rice
2 cups water
butter, salt, if desired--I don't use it.

Boil, stir, cover and simmer for 50 minutes. Do not remove lid, remove from heat (I just turn off burner on ceramic cooktop) and let stand, covered, for 10 minutes. Fluff with fork.

Not sure--maybe basmati is naturally softer than regular brown rice, but it is always delicious.

I've tried many different ways to cook brown rice and the best one is the pressure cooker. I wash the rice first, then soak it in fresh water(about 1 inc. higher than the rice) for at least 1-2 hrs.( or overnight),bring it to a boil, put lid on,wait for 5 mins. on high pressure, turn the heat down to medium-low for another 40 mins. Voila.. yummy rice!

I cooked any regular rice this way. Basmati is so friendly that cooks shortest time. My brown rice is organic and not too polished.

thanks to all of you for suggestions. All of them are worth to try. Obviously, soaking overnight is a first thing to do.
I never had problem to get excelent fluffy rice. This one is stuborn. I see what the difference it makes if rice is not processed regular way.

Here in Asia, rice is routinely rinsed several times and then soaked for 20 minutes. This not only removes impurities, but also removes excess starch which is what will make the rice sticky if it is not soaked first. The starch is better for us removed anyway.

I guess the Chinese should know best?!

i have 2 rice cookers. the small one was about 20 usd. i throw 1 cup rice 2 cups water (or 1:2 rice to water) and turn it on. sometimes i put in a little salt or olive oil for minimal flavour. then when the cooker clicks to warm, it is done, perfect every time. no rinse no soak nothing. very hands off and easy. and i think that most asiatic households have these, at least most asians that i know have including japanese, chinese, and korean.

You're right - the rice cooker is as much a staple here as the rice itself. The self-timing is what makes it nice.

I think this is the least preferable way if health is of concern because high heat applied to carbs creates so called AGE compounds. The best way to prepare meals is using low temperatures.

Soaking is a good idea if health is of concern as soaking (for hours) grains neutralizes antinutrients present in them.

This is THE way to cook rice -- at least that's what we Louisianians learn at a very young age (as soon as we're weaned off the baby bottle with Tabasco in the milk).

Hi, Matylda.

Here is the skinny on perfect rice every time:

Bring 2 cups of water to a boil. Add one tsp of mineral salt if desired.

Add 1 cup of dry rice and bring back to a boil. Stir once to be sure the rice is not clumping.

Set the burner on simmer, and cover the pan.

Do not uncover the pan to check (Be brave!) and set it to simmer for exactly 45 minutes. Then turn off the stove.

For larger batches, double the measurements.

Let us know what you learn.

thanks a lot. I am happy to find out that we use exactly same method to make regular rice. It doesn't work for organic almost unpolished and not preboild rice.
It seems that soaking overnight may be a solution. I hope to try it before going away for 2 months in 4 days.

Great but what kind of rice cooker? I can't seem to find any agreement on what works best for brwon rice. I know a pressure cooker works good, but what about a rice cooker? I have also heard that the only ones that really work are the low cost steamers.

And while I'm at it... are there any good ones without a non-stick coating?
