whole foods diet vegetables

Hello everyone,

i have read in a few places that you should always prepare your vegetables fresh, with every meal that you choose to eat veggies with. this allows you to absorb the most nutrients from your veggies.

i bring my lunch to work which means that i need to prepare my vegetables that morning. typically, i steam them for 10 minutes at 7AM and eat my lunch at 1PM.

am i really losing that much nutrients that i need to be concerned about this? just a thought. curious to hear opinions. my only option for making veggies at work is either to eat them raw or nuke them.

Hi Dan:

You can eat them cooked and cold in a salad with raw greens. Don't nuke them.

I think what you are doing is actually great. You might vary cooked and raw sometimes. I agree with Philly Lady, don't nuke them.

Dan,

I agree with Jan & Philly.

However, with the current state of the safety of fresh produce I am getting cautious. Fresh frozen are actually a better source of trace nutrients than fresh, anyhow, and have a much better track record for cleanliness.
