Okay, I just order Dr Stolls book & Beth Loiselle's book on whole foods, but until I get them, my question is - can you use things like salt, butter, soy sauce, etc to give some zests to these foods? I think it's going to be hard making things that taste good without some condiments. Thanks for any input.

Hi, Val.

Learning to use spices, herbs and condiments is one of the secrets to enjoying a whole foods diet MORE than the crap we are sold on on TV.

Your healthfood store should have a simple booklet on the use of herbs in cooking and diet.

If you don't have a garden, then you can try patio windowsill pots. Fresh herbs taste great all year round. Most grocery stores sell a selection of packaged fresh herbs.

If your herb and spices in your spice cupboard are stale, treat yourself to some new ones. A lot of grocery stores, natural food stores, and health food stores also sell dried herbs and spice blends cheaply in bulk, as well as non-irradiated organic herbs and seasoning mixes in shaker jars without added salt, sugar, or MSG. Frontier and The Spice Hunter are two brands I can get locally (Safeway and Albertson's grocery stores). I have about a dozen different jars of Spice Hunter herb and spice blends for everything from grilled meat to vegetables. They are delicious. I often use the marinade or basting sauce recipes on the labels too, altering them to fit my diet requirements. Light sprinklings of sea salt, fresh ground pepper, lemon juice, Bragg's Liquid Aminos, etc., can do wonders for a plain dish. Experiment!
