allergy to toast

Ref: Kimberly May 08.
I too have an allergy to toast. I can eat a piece of bread and butter fine but if its toasted I have a severe adrenelin type reaction. What chemical is produced when bread is toasted so i can avoid this?

Hi, Sue.

The reason toasters were even invented is that the intense heat (resulting in the toasting) converts some of the starch molecules in the bread into fragments of those molecules (mono and disaccharides) which taste slightly sweet.

You sound like an ideal person to give a perfect try at a PWFD and see what it might do for you in a couple of weeks.
