Do these Bread Ingredients qualify for Whole Food Diet?

I live in NC and am having a difficult time finding 100% Whole Wheat bread without sugar or preservatives. I have located a brand which contains the following:

Stoneground Whole Wheat Flour, maltitol, wheat gluten, yeast, butter, salt, Dough Conditioners(sodium stearoyl lactylate, calcium stearoyl-2-lactylate, monoglycerides, calcium iodate, ethoxylated mono and diglycerides, calcium peroxide) cultered whey, vinegar, natural flavors, calcium sulfate, monocalcium phosphate, yeast food(ammonium sulfate)

Would this bread be recommended for a whole foods diet? I did find another brand with 100% Whole Wheat but it has added honey, and molasses giving a sugar reading of 2g per serving.

Hi, do you have Beth's book? The bread you found isn't perfect whole food - her book has a handy ingredient index in the back with "yes - no" for each. Also there are recipes for making your own. Another alternative, try the frozen section of some health food stores for sprouted grain breads. The only ingredients - sprouted grain (often wheat) and water.

Hello, I did a little research yesterday and found that half of the ingredients in that bread do NOT qualify... sneaky sneaky, even though they advertise as Whole Grain and Sugar Free... I looked through my "Healing Power of Whole Foods" book and found in the back what you described as a chart of various ingredients... I also found that in Chapel Hill there is a "Great Harvest Bread" company... so i plan to call them today. Thanks for the help.

When I was in practice the Great Harvest Bread Company (Lexington, KY) made a special recipe with diastatic malt that was a perfect whole food recipe (to MY specifications). They will still ship anywhere in the US for a modest fee and you can stock up on perfect bread in your freezer. Ask the operator for their phone number. If you get their email address, let me know what it is.

Ask for their sugar free diastatic malt bread. It was necessary for me to do this so MY patients could deal with their refined carbohydrate adiction. However, many of them continued to use it even after the 6 months when they could have used most of the Great Harvest recipes.

This is the parent company. So far as I know, MY recipe was not a "sanctioned" recipe by the parent but only the Lexington store did it as a favor to me and my patients.
