Would you mind posting an example of what your diet looks like on a normal day, now that you are well?

Sure. Here it is:
Upon waking = Primal Defense, Digestive enzyme, green-tea concentrate in 8oz of natural high-mineral water w/structured water concentrate
Pre-breakfast = Vegetable juice (or fermented vegetable juice) w/shredded coconut (or raw egg yolk), fish oil
Breakfast = Raw goat milk kefir shake
8-10oz raw goat milk kefir
1-2 tbsp extra virgin fermented coconut oil
1 cup berries
1-2 raw DHA-enhanced egg yolks
1/4-1/2 banana
1 tbsp goat milk protein concentrate
pinch of stevia
Lunch = Grass-fed beef w/sauteed onions, garlic, olive oil, herbs, tomatoes, Steamed broccoli w/butter & herbs, and a side of lactofermented vegetables
Snack = Sourdough, sprouted grain bread w/raw butter
Dinner = Salad w/homemade raw dressing, Omega-3-rich Ostrich w/added coconut oil or olive oil for fat, steamed cauliflower w/butter & herbs, a side of lactofermented vegetable (usually, the fermented vegetable will be a starchy vegetable to help increase serotonin and to bring relaxation for the evening
Evening snack = Bowl of berries w/raw cream or if I'm in the mood---baked granny smith apple w/warmed raw cashew butter (this is a high-carb snack and may not sit well with some people. My main meals are always low in carbs and starches but sometimes my snacks are higher carb depending on how I am feeling.)

Thanks for the insight. I just bought Jordan Rubins book "Patient Heal Thy Self" it sounds like you eat pretty close to that. Have you read his book? I have just begun to eat buffalo, ostrich and more red meats. I have also dropped chicken, fish, and turkey. This a reverse of what I have done for the past 15 years. ALL of my joint pain is gone and my elmination has never been better. I'm not sure why, but I read some place that white meat actually feed yeast. Have you heard this from others?
Also, do you have any idea how one would go about fermenting a sweet potato? I eat a lot of fermented cabbage , but I'm intrested in the juices and other foods. Everyone always says to eat few tablespoons with each meal. Is that to imply one could eat too many?

I don't get obsessed with rotation. However, I do try to vary my foods. If I have broccoli and string beans one day, I'll try to do cauliflower and asparagus the next. As far as salads go, there are only so many vegetbales you can use but I try to vary the types of greens I put in. I use different home-made salad dressings and sauces to vary flavors as well.
As far as the proteins are concerned, I have a plethera of choices--turkey, chicken, beef, ostrich, bison, venison, eggs, goat yogurt. That's plenty to rotate. I don't eat fish or pork.
I only consume a small amount of fruits. I eat all of the various berries, cranberries, granny smith apples, grapefruits, cantaloupe, honeydew, cherries, and small amounts of banana, pear, kiwi, and other high-sugar fruits but they are consumed in small amounts and with added proteins and fats to stablize blood sugar. Yes, I have read the book. I was already doing everything in there plus more. The book is excellent and I recommend that everyone read it.
Get "Nourishing Traditions" by Sally Fallon. Fermented sweet potato is one of the recipes.

What are the added proteins and fats that you use to stabilize blood suar when you et high sugar fruits?

I've asked Sally Fallon, an author of Nourishing Traditions, why lacto-fermented plant foods are recommended to be consumed as condiments. Here's what she said: "You could have a diet that was 100% lacto-fermented if the foods fermented were mostly animal foods, like meat, milk and fish. But the lactofermented plant foods would not provide all that you need. Also, I think a diet where all the plant foods were lacto-fermented might be a little boring (no soups, salads, steamed veggies, etc) Normally the fermented plant foods are eaten as condiments."
So, I guess one could eat too much because the plants would displace other foods. But not because they are dangerous by themselves.

Do you consume raw as well as cooked meat as suggested in "Nourishing Traditons". Also, I interested in the green tea concentrate, natural high mineral water and structured water you mentioned. Would you mind posting brands or websites where I could find these.
I am still battling yeast, but aside from the sourdough bread, I think this way of eating would work for me. Although, I have tried green juices before and felt as though stirred up the yeast. Have you found this to be true for some people. I am very frustrated by this as I believe they are so benefical.

The raw meat I consume right now is raw ostrich. What I do is, I merely sear the outside of the meat leaving the inside raw. Since most of the bacteria are on the outside of the meat, this ensures safety.
The structured water concentrate is called "Crystal Energy". I will be switching to "Springs of Life" when Garden Of Life comes out with theirs.
The natural high-mineral water is called "Noah's Mineral Water" http://www.noahs7up.com/index.html
The best vegetables to juice while having candida are fermented vegetable juices. "Nourishing Traditions" by Sally Fallon shows how to do this.

I don't eat much fish due to the mercury and other contaminants. Occasionally, my uncle does deep sea fishing in the arctic. When he does, I'll often eat some of his catch because he fishes in very unpolluted waters (he is a fisherman by trade if you hadn't figured it out already).
The proteins/fats are usually coconut milk, coconut oil, shredded coconut, or raw goat milk cheese (contains protein)

No, I have never heard this and I don't think it is true. What MAY be happening is that the anti-biotics and hormones in the poultry could cause a worsening of the candida. It could also have something to do with the fact that poultry is high in polyunsaturated fatty acids which, if eaten in excess, imbalances the prostagladins that regulate inflammatory responses in the body. If too much inflammation is present, the body could become too acidic which would set up a breeding ground for candida.
Buy organic poultry and eat it in moderation. If you STILL have joint pain, you may just have an allergic sensitivity to it. You should avoid it if that's the case

For structured water do you have an opinion of the Actimo unit (that Gregory uses)? This would seem to be far more economical in the long run than bottled concentrate, since you make the structured water yourself. I seem to recall some conversation about your field testing water from this unit as you did with the Penta hydrate. Thanks in advance!
