The vast majority of people would be better of eating this way. Those that have no insulin resistance, heart disease, diabetes, or weight problems could safely eat 2-3 servings of grain products a day providing that they tolerate them. This buisness of eating a high-grain diet (more than 40% of calories) is nothing but a health disaster waiting to happen. Grains are high in omega-6 fats which when imbalanced with omega-3's, can cause a host of disease states in the body. We need to maintain a 1:1 or 2:1 ratio of omega-6:3 to obtain optimal health. This simply cannot be done on a high-grain diet. I hope you find these references helpful

Another reason to not eat grains : they interfere with zinc and magnesium absorption.
I'm a 51 year old male and I have copper water pipes here in my home and I suspect that I have elevated Cu and Zn deficiency. This can cause serious problems if not addressed.
I'm going to cut way back on grains, maybe eliminate them altogether.

That would be smart. Some people can get away with eating 1-3 servings per day if the grains are properly prepared, but even then, not ALL of the phytates and enzyme inhibitors are broken down during soaking or cooking. So, if too many grains are eaten, nutrient absorption will still be hindered. Good call!

JD, I was recently tested and was found to have very elevated copper levels, with deficient zinc levels (I recently posted about this). Not sure where I got all the copper from though. Was glad to see someone else post about Cu & Zn imbalance.

Seems to me the main problem here may be the copper pipes. Copper can interfere with zinc absorption and is a cause of copper toxicity. This is an excerpt from
Physical Symptoms of High Copper:
Headaches
Hypoglycemia
Increased heart rate
Nausea
Copper deposits in the brain and liver causing damage.
Damage to the kidneys
Inhibit urine production
Causes anemia
Causes hair loss in women
High copper interferes with zinc, which is needed to manufacture digestive enzymes. Many high copper people dislike protein and are drawn to high-carbohydrate diets because they have difficulty digesting protein foods.
Excessive copper in children is associated with hyperactive behavior, learning disorders such as dyslexia, ADD and infections such as ear.
Psychological Symptoms of High Copper:
Autism type symptoms
Depression
Hallucinations
Hyperactivity
Insomnia
Paranoia
Personality changes
Psychosis
Schizophrenic type symptoms
Overstimulation
Disperception of the senses, time, body, self and others.
Produces hypomanic states
Detachment from reality
Drinking distilled or reverse osmosis filtered water, liver cleansing and zinc supplements can help remove excess copper. There is more interesting info on that page I referenced.
Since you may be going to a no grain diet, you may want to supplement with kelp, eat green veggies, nuts to keep up the magnesium levels. Of course you can always take a magnesium citrate supplement or the like, but I prefer food sources.

I wasn't planning on eating nuts because they are said to be high in copper (in relation to zinc) they say. Planning on meat, vegetables and fruit only. I'm not sure if I'll be able to adhere to ER4YT but I could to the Paleo diet.
