Dr Stoll,
This site is new to me. Interesting. Have you ever heard of the book Nourishing Traditions by Sally Fallon? It explains how foods are processed and harmful, all aspects of nutrition and how the body reacts to EVERYTHING; what 'foods' and lack of nutrients ,etc contribute to diseases, etc...
It is also a great cookbook for anyone who wants to change their life.

I just received my copy of Nourishing Traditions recently and have been working my way through it. I am very impressed with it - it ties together a lot of the stuff I've learned from other places, and I kinda wish I'd come across it earlier. If somebody wanted just one book to turn their diet around, this is the one I'd recommend. Sure, some people might then need to take things another step further and do an elimination diet to fine tune things, but this would be a great start for everybody.

No, I had not heard of this book but it sounds like another good place for people to start.
