Dr Stoll, I put a post a while ago about cellulite despite a strict vegan diet, and you said it must be hormonal. I read something on the net today about soy, and it effecting our hormones. I usually drink 2-3 glasses of soy milk each day. Could this be the cause of my hormone imbalance and cellulite?

I know you thought you were doing the right thing with your vegan diet but you need to respect your body's own biochemical individuality. Everybody reacts differently to increased/decreased levels of protein/carbs and fat. If your genes are such that require you to eat more protein/fat, you will working against yourself. Essentially, this is what is happening to you:
You are overeating carbohydrates. Your body is not geared to handle this many carbs, do your'e producing too much insulin. These excess carbohydrates end up being stored as fat. You may very well be getting sufficient fat if you are eating olive oil, flax oil, nuts, seeds but you are definitely short of protein.
See, the protein in animal foods is most easily digested. Protein from plant foods are often encased in fiber. The more fiber in the food, the less digestible the protein. Not to say that you can't protein from plant foods. Obviously you can. People who have the genetic tendancy towards a high-carbohydrate diet (Europeans are often in this category) can get away with it but for the rest of us, we need to track our protein better.
Also, the source of the carbohydrates are important. Some carbs produce a sharp rise in blood sugar (cakes, white flour). Even seemingly healthy carbs like carrots, peas, potatoes, grains, breads, pastas, mangoes, bananas, cause way too much insulin to be released. This sharp rise eventually causes a sharp fall. You can only store so many carbohydrates (glucose). if you are constantly spiking your blood sugar, you won't be releasing carbs as energy and you will store it in the most efficient way your body knows how,.....as fat!!! So, the carbs you should be focusing are fibrous vegetables like broccoli, kale, cauliflower, okra, asparagus, and low-sugar fruits like berries, apples, cherries, pears and so on. Nuts are perfectly fine.
Eating fat is much better than eating carbs. In fact, your body can use the fat as energy more efficiently than carbs. If I were in your position, I would NOT be eating a vegan diet because of your probable genetic pre-disposition towards a higher protein diet. I would include at least 1 animal food: fish. You could also add kefir and yogurt. This would be your healthiest bet. Remember, Fish is high in omega 3 fatty acids, contains easily digestible protein. You can choose other meats like chicken. Just choose a cut low in fat. Despite what you may think, saturated fat does not cause heart disease. In fact, saturated fat is essential to health in small amounts. It is the consumption of vegetable oils that leads to heart disease, cancer and cardiovascular disease.
Your point about the soy contributing to cellulite, I would have to say no. It is the other dietary factors that are contributing. you need more protein. Soy protein isolate would be an easily digestible protein for you. If you are american, I wouldn't use too much soy unless you are using it for a medical purpose. Americans are not geared to handle soy very well.
Lastly, when considering diet, you should know that our genes are virtually the same as they were 100,000 years ago. before about 10,000 years ago, there were no grains, breads, pastas, potatoes. Man lived on meat, fruits, vegetables, nuts, seeds, tubers. From an evolutionary standopoint, we are not geared for these foods. But like I said, there are certain cultures that are more adaptive than others. This is why you will always find a faithful following of so many popular diets today that seem to be so opposite.
1) Atkins - high protein/fat, low carbs
2) Ornish - high carbs, low fat/protein
3) Mcdougal - high grain, low fat/low protein
4) Protein power - high protein, moderate fat, low carbs
5) Paleolithic - meat, vegetables, olive oil, fruit, nuts
6) Vegetarian - veggies, nuts, seeds, oils, fruits (dairy,
eggs)
7) Vegan - no animal foods
I could go on, but notice. #1 and #2 are complete opposites but people are thriving on both diets.
I gave you a lot more info than you asked for but I thought it would really help you understand what is happening in your body when you eat. The concept of a vegan diet is a beautiful one. If,...you have the genetics for it!!
So, what I think you need to do is, you need to eat several small meals a day that includes enough protein to satisfy your unique chemistry. A great way to figure out your unique protein reqirements is to use the reccomendations for body analysing in the book "The ZONE". You don't necessarily need to follow all the eating recomendations. In fact, the author allows many poor food choices at times, as long as you get your protein. I disagree. Find you ideal protein requirements, and meet them with a more healthy diet. Great protein sources include fish, chicken, eggs, Low fat dairy (but not fluid milk. yogurt or kefir), Tofu, and whey protein. Legumes are higher in protein but the protein is less digestible.

I could care less at this point if "helping you" is an inmate on death row (and I'd bet my last dime that he isn't). He is extremely helpful to this board, and at the very LEAST, saves Dr. Stoll from having to retype information on numerous occassions.
Unlike the case with "helping you", no one cares what YOU have to say.

I agree with pretty much all you said. However, there's one thing that seems confusing to me. On one hand, you said fat is OK, and saturated fat is good (and I think the same way); on the other hand, you said to choose low fat dairy and low fat meat cuts. If the animal fat is good, then why take efforts to avoid it? Some say that meat of wild animals that people originally ate was naturally lean. This may not be so. If I am not mistaken, bison meat is fattier than that of beef. Whether it is so or not, according to W. Price, natives in different parts of the planet often looked specifically for animal fat and discarded the meat. And were said to be healthy. So why avoid fat? Those people were very physically active, though. Would you please clarify this to me?

I told her that because being on a vegan diet, she was probably under the impression that saturated fats are bad. I didn't want to come in there and throw a monkey wrench in her whole program. If she could bring herself to eat a cut of meat, fish, or eggs per day, I don't see a reason for her to have to go that route. What you are suggesting is perfectly fine. I am very familiar with the work of Weston A. Price and agree with his nutritional advice. I just didn't want to overwhelm this person with too much info. I remember when I was into the "vegan" seen and thought all animal proteins and fat were bad. Needless to say, I suffered the blunt of that joke. So I can relate. I didn't want to change my view right away. Anway, that's the reason for my "modified" advice. By all means, post to her the whole story if you feel it will help her. Take care

I have always heard that saturated fat is unhealthy, by raising cholesterol, and that unsaturated fat is good for you. Could you explain to me why saturated fat is good, and unsaturated isn't?
And about eggs, are they healthy? What about all the cholesterol in them?
I have recently been researching nutrition alot, and am very overwhelmed by all the conflicting information out there. I began eating fish a few weeks ago, and am considering eating free range eggs. I don't want to eat dairy or other meat though. I discovered that I am hypoglycemic, and eat far to much carbohydrates, so what you said in your post made sense, but I didn't realise it could be the cause of cellulite.

When my children were small I found it was much better not to encourage their bad behavior by answering their childish statements. Just my opinion, but it seems that some children love to cause trouble. When they grow up, they will hopefully change.

I know your making a general comment to everyone on the board, but the funny thing about the last comment is "I'm not mad". Infact the last comment made me laugh. Yes, you're right, Raisa, but it's so infuriating that it was hard for me to keep my mouth shut. That person sounds like a spurned lover - it definitely IS personal. Hi, Kate.
I know of no research. However, your dose IS pretty high.
The laboratory tests to prove this have not yet been developed. The only lab capable is your own bodymind. SO, if it were me, I would totally stop the soy for a 6 month period and keep a diary of what you notice. It will take a couple of years to totally reverse the condition IF this is the cause but you should be able to tell some difference in 6 months.
Let us know what happens. I will learn along with everyone else.

One COULD say to him "get a life" but he likely would not know what that meant.
Every board has "participants" like this and the only effective response is NO response. When you see the name just pass it by. Of course, then he will just change his moniker. However, soon that is not effective and he will just pass on to somewhere where he CAN get a reaction--which is the ONLY thing he is after.

Looks like this brings up a question of ethics. Would you take good advice from someone who may have questionable character? Just because someone is knowledgeable and helpful does not necessarily mean that the person doesn't have a dark side. Who knows if there is any truth to these allegations, but there is no proof whatsoever that Gonci Buster is making any of this up. There also hasn't been any proof that it is true, as well.
