Just wondering... my mom bought a jug of milk and accidentally left it in the car for 7 hours. She brought it inside, tasted it and thought it tasted fine and put it in thr fridge. Is this safe or should the milk be trashed? I think the milk could have had too long of an opportunity for organisms to grow.

When the milk is processed, it is heated to a certain temperature for a specific amount of time to kill bacteria. Since this jug of milk was not opened, it may still be okay, but I bet it won't last for more than a couple days. Try to use it quickly (make pudding, potato soup, anything with milk), and ditch it as soon as you notice a funny smell.

I know of few germs that cause sour milk that are dangerous. After all this is how one makes cheese, yogurt, kefir, buttermilk, etc.
It is safe to taste any suspicious milk. Smell and taste are excellent ways to tell if milk has started to turn.

The safest milk is raw as it contains substances that prevent pathogenic microbes from growing. But I doubt your milk is raw. Pasteurization destroys these substances and kills only some bacteria, including many lactic acid producing ones. Some bacteria, including some pathogenic ones, remain alive.
From my experience, I am sure your milk is still safe. If it develops a bitter taste, I'd throw it away, but if it sours, it's good and has become a source of probiotics for you.
