I am having trouble figuring out a tasty way to include one or two tablespoons of virgin coconut oil into my diet. Due to the fact that the oil hardens at temps below 76 degrees fahrenheit, putting it in an icy fruit smoothie is not working. At the bottom of my smoothie is this big nasty clump of coconut with lard like consistency. UGH.
Anyone have any idea for easily incorporating this healhy oil into the diet?

I am not convinced that coconut oil is a "healthy oil" for internal use.

Yes, I am confused now. It's touted as the healthiest oil on earth and people from parts of the world who use this oil daily live very long, happy, healthy lives.
On the other hand, I read it's a saturated oil and satured fats cause athersclerois (sp?).
What to believe!

I am not a specialist in the organic chemistry of oils and their physiologic effects. However, from that I have read, I believe that coconut oil is touted mainly by the manufacturers of coconut oil. Olive oil is what I use internally and coconut oil is what I use in my shampoo.
I would be interested in hearing from anyone who has articles PROVING otherwise.
Hope this helps rather than further confusing the issue.
