I know that hydrogenised vegetable oils are bad for our health, and so is frying in oil, so is any heating of oil just as bad? Like bread that contains oil, does the baking process make it toxic?
And can anybody tell me about the process of making rolled oats and rice bran? In particular are chemicals or heat used in the process?

I had the same question several weeks ago before finding info that helped sort it out. Here's what I learned. Hydrogenation of oils is a multi-step process that takes oil one step further than its conversion into transfatty fat. It gives the oil an ability to "preserve" (actually, keep rigid) a food that would otherwise go stale or ruin if not eaten in a day or two. It's comparable to a plastic in function, not oil, since oils naturally go rancid. This conversion of natural oils requires more than just heating the oil before bottling. Unfortunately, just heating a natural cold-pressed oil can turn it into a transfatty one. Each oil has a different heat sensitivity that determines its best cooking use. Coconut and peanut oils are best able to withstand high heat without becoming damaged. Here is the breakdown according to The Grain and Salt Society (sellers of celtic sea salt and oils):
Flax seed oil: Cold preparation only, up to 200F*
Sunflower oil: Low heat cooking, up to 212F
Safflow oil: Low heat, up to 212F
Sesame oil: Med heat (stir fry, some baking) up to 325F
EV Oil oil: Medium heat, up to 325F
Coconut oil: High heat, to 375F
Peanut oil: Should be same as coconut oil
* I think it's alright to mix flax seed oil into already cooked oatmeal (I let it cool a bit first) or to pour it over cooked vegetables that are NOT piping hot. Good luck

What about canola oil? That's what I usually buy. Is it ok for high heat?
