Hi, Wendy.

In order of your questions:
1. Without the buffering effect of protein or fat mearly everyone would have this response.
2. It is called "A F & Betafood" produced by Standard Process Laboratories. Best results are obtained by chewing the tablets (usual dose is 2 tabs) just before or during the indulgence.

Maltitol works pretty good. It's healthier than artificial sweeteners like Splenda or Sweet 'n low. The only negative thing is that it acts like fiber since it doesn't get absorbed by the body. Your kids might end up in the bathroom more than usual. But it is good for constipation. I like Doctor's CarbRite Diet SugarFree candy bars. Only eat a few squares at a time to see what kind of affect it has on you or your kids.
