Chinese Herbology has used whole dried sprouted grains as digestive aids of undigested starchy foods(treatment of Food Stagnation). Fructus Hordei Vulgaris Germinantus (Mai Ya)(Barley Sprouts) is said to facilitate digestion and to a certain extent possesses Spleen/Stomach strengthening properties. It is especially useful for Cold Food Stagnation where ther exist problems with food absorption. It is also used for infants with trouble digesting mother's milk. It can inhance the appetite & digestion in the weak deficient type of person. Useful for distended or painful breasts especially during lactation.
Fructus Oryzae Sativae Germinantus (Gu Ya)(Rice Sprouts) has less pronounced digestive properties and is most appropriately used for Hot Stagnation.
In both cases it is contraindicated to use by nursing mothers- unless they are weaning or need to arrest lactation.

Thanks, Mayer.
It also works very well to make the bread rise without using any form of sweetener for the yeast.
