I'm a bit miffed about the statement that glucose shouldn't be given intravenously during surgery. As the body runs on glucose and the bloodstream always contains glucose how is IV glucose detrimental?

The same way any naked carbohydrate is dangerous when eaten only worse since it is being given IV when the person is highly stressed and needs every bit of immunity possible!
A whole list of references about the effect of naked carbohydrates and immunity was posted just this past week (not yet archived).
