Dehydrating

I missed the dehydrating thread on the old board..wasn't interested at the time, but now I am.

I passed on an Excalibur model on craig's list because it only heated to the 140s and from what I have read beef jerky needs 160s.

Nesco seems to be the other brand that gets good reviews.

Any comments on the machines or anything to do with dehydrating that I might have missed from the other thread is appreciated.

Oh,, and does anyone have a good way to slice thin wafers of jicama and beef and other things like yams? I've read an electric slicer is a good way to go.
