Potato sensitivity?

Normally potatoes don't give me a sensitivity reaction, but tonight I baked them slowly for two and a half hours on 350, as opposed to my normal one hour on 425. I've never baked them this way, and after eating two of them my nasal passage, eyes, and throat felt dry. One hour before the potatoes I ate a naval orange, so I'm wondering if this could be a reaction to the potatoes cooked this new way? Or could it be a combination of the orange and potatoes?
