You might try putting the garlic in a more visible place to remind yourself to use it every day, but, if that doesn't work, maybe peel,slice and put into a small jar of olive oil in the fridge on the day you buy the garlic-shouldn't dry out in oil and you can take out a slice or two to mince whenever you need some. Of course, when you get to the bottom of the jar, use the oil in cooking, to use anything that leeched out of the garlic
